Abk\u00fchlen lassen. Wasser, das Schinkenst\u00fcck, die Zitronenschale und den Zucker in einen Topf geben, mit einem L\u00f6ffel umr\u00fchren und kochen lassen, bis ein Sirup entsteht.<\/p>\n<p>b) Den Topf beim Kochen zudecken und die Hitze reduzieren, damit der Schinken seinen ganzen Geschmack entfalten kann. Vom Feuer nehmen und abk\u00fchlen lassen.<\/p>\n<p>c) Das Ei in einer Sch\u00fcssel verquirlen. Die Eigelbe zugeben und vorsichtig verr\u00fchren. Den durchgeseihten Sirup unter st\u00e4ndigem R\u00fchren zugeben. Denn den s\u00fc\u00dfen Wein dar\u00fcber gie\u00dfen und alles gut vermischen.<\/p>\n<p>d) Diese Mischung in die ausgekleidete Form geben und im Wasserbad im vorgeheizten Ofen bei schwacher Hitze ca. 40 min. garen lassen, bis die Masse fest ist.<\/p>\n<p>e) Abk\u00fchlen lassen, bevor der Pudding aus der Form gest\u00fcrzt wird. Im K\u00fchlschrank aufbewahren.
